Rice Krispie Treat Pops

In 1.5 weeks I go back to work after being off since August 2009. I had C & T, and was able to spend almost a year with them and J before I have to return to my full time job with the Canadian Federal Government. I'm trying not to think too much about it, but it will be difficult. In addition to worrying about leaving my babies, I am also worried about my ankle. I was in a car accident in the middle of May and my ankle was crushed. I had surgery two days later, spent 2 weeks in a plaster cast, another 4 weeks in a boot cast and have only been weight bearing for 1.5 weeks now. It's extremely painful to walk as I broke my tibula and fibula. Your tibula holds 90% of your body weight and if it doesn't heal properly can cause life long problems, in addition to the arthritis that I will get because of the injury. I'm nervous about going back to work with so much pain and having to use crutches. I'm hoping most of my pain will be gone by then. Please keep your fingers crossed for me! I am taking this time to enjoy every last moment with my three children and this recipe was for J.

As I'm posting this I'm getting a nasty but loving look from my brother, Jordan, creator and head baker of Karate Kitchen. He was the one who actually thought of this treat and actually did all of the prep, however; the clean up still has to be done...

J had a friend over this morning for a play date and they ended up decorating these after Jordan did all the prep work. This is an easy treat that everyone can make!


 
Here's the recipe:

Rice Krispies® Treat recipe (see below)
2 cups of milk chocolate wafers
2 cups of white chocolate wafers
24 lollipop sticks
Sprinkles and Zoo Decor Mix


Rice Krispies® Treat:
3 tablespoons butter or margarine
1 package (10 oz., about 40) regular marshmallows

6 cups Rice Krispies®


1- In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.

2- Add Rice Krispie cereal. Stir until well coated. Remove from heat to cool.

3- Melt milk chocolate and white chocolate wafers over double boiling pot (do each one separately). Stir until all the wafers have melted. Remove from heat and cool.

4- Once
Rice Krispies® mixture has cooled, take about 3 tablespoons of mixture and roll into a ball. Put lollipop stick into middle of the ball. Do this 24 times.

5- When the bowls containing the chocolate have cooled, begin to coat Pops with chocolate. Once coated place on wax or parchment paper.

6- Sprinkle with Zoo Decor Mix or any sprinkles you have available. Place on wax paper and put in the fridge so the chocolate hardens.



J is usually a quite happy boy but he was not in the mood to smile for this picture!




You can also drizzle the chocolate over the Pop for a more sophisticated look.
